A delicious tomato based curry with green beans. Serve with rice, jacket, naan, chapatis or whatever you fancy!  Garnish with fresh coriander if desired.

 

  • 5 tablespoons olive oil

  • 2 medium onions finely chopped

  • 1 heaped tablespoon of tomato puree

  • 4 tablespoons Karen’s Spicy Marinade

  • 630g pack of chicken fillets (approx 4) diced

  • Pack of trimmed green beans cut into 3

  • Tin of chopped tomatoes

  • Chopped coriander (optional)

 

Heat the oil in pan/wok on medium & add onion. Cook for 5 minutes. Add tomato puree & Karen’s Spicy Marinade then mix through. Add the chicken & cook on a low-to-medium heat for 15 minutes. Add tinned tomatoes & green beans. Bring to the boil then stir well & simmer on low for 25 minutes ... delicious!
