  • 400g passata

  • 2 tins tuna

  • 250g penne

  • 3 spring onions, chopped

  • Half red pepper, finely chopped

  • Handful of olives, halved (optional)

  • 1 tsp dried oregano

  • 1 tbsp Karen’s spicy marinade

  • 70g reduced fat mozzarella

  • 12g Parmesan, grated

  • Salt & pepper, to taste

 

Cook pasta in salted boiling water until al dente.

 

Put all ingredients except tuna, mozzarella, Parmesan in saucepan & warm through for 5 mins, season to taste.

 

Mix warmed sauce with pasta and add tuna, stir well.

Put in baking dish, & dot pieces of mozzarella all over, sprinkle over Parmesan.

 

Bake at 180 degrees for 20 minutes.
