A proper winter warmer, great with a hot & crispy jacket potato & salad, white & wholegrain rice or pasta, new potatoes & vegetables or even on its own! You can replace any of the ingredients with your chosen substitute to suit your dietary requirements:
3 tablespoons extra virgin olive oil
One onion chopped
500g minced chicken or turkey
Pack chestnut mushrooms (quartered)
4 tablespoons Karen’s Spicy Marinade
Tin chopped tomatoes
100ml double cream (or substitute)
McDougalls Thickening Granules
Heat oil on a medium heat & add the onion, cook for 5 minutes. Add minced chicken & when almost cooked, add the marinade & cook for a further 5 minutes on a low heat. Add mushrooms, chopped tomatoes, cream & heat through.
Simmer on a low heat for 20 minutes & if desired, add thickening granules to thicken to your required consistency (start with just a little). Delicious!
