2 chicken fillets
1 teaspoon of Karen’s Spicy Marinade
1 egg beaten
Grated extra mature cheddar
Oil for frying
Pre heat oven 200
Slice the chicken fillet to make a pocket & using a teaspoon, place marinade in pocket then add grated cheese.
Secure fillets with cocktail sticks.
Roll chicken in flour then coat with egg, then the breadcrumbs.
Heat oil in frying pan & fry chicken on both sides for approximately 3 minutes until crisp.
Remove from pan and place on baking tray. Cook for approximately 15 minutes checking through thickest part to ensure thoroughly cooked.
