1 tablespoon olive oil
2 onions finely chopped
160g sun-dried tomatoes in oil (drained & finely chopped)
1 red chilli
800g minced turkey breast
3 tablespoons Karen’s Spicy Marinade
160g olives halved
1 tablespoon dried oregano
Salt & pepper
Pre heat oven 160.
Heat oil in large casserole & fry onions for a few minutes.
Add chopped sun-dried tomatoes & red chilli, stir fry for a couple of minutes.
Add turkey mince and fry on a medium to high heat for a few minutes, breaking it up as it starts to cook. Add Karen’s Spicy Marinade & stir well
Add passata and stir well, then add olives & salt & pepper to taste. Bring to the boil then cover, place in oven for one hour.
